Doesn't Steam allow you to do it by right-clicking a title and selecting ''backup game files''?
Or is there a benefit to doing it manually?

That saves the game files, not the save. So not only will you waste a ton of space backing up 18Gb, you wont save your save.

Damnit...that's why it was taking so long.
What is the point of backing up a whole game when you can just download it again? XD

For people with slow connections, they can back it up, reformat or move to another PC easier. For someone who has fast internet bandwidth caps can be a reason. If for instance your PC dies, you cant re-download 1TB of games (at 20 to 50GB a piece wouldnt be that many). With a backup you dont need to waste bandwidth cap.
Use the script i mentioned above, it takes 1 second to run (or less), and you can schedule it to run as often as you like, so you can have a backup every few min if you wanted. And each one is only 30kb.

Well I just checked it out and the folder is being backup up regularly by Windows so I think I'm good. But thanks.

Whelp that blows, I've lost my saves in this game and Assassins Creed: Odyssey because I expected the Save Files to be located in either AppData or My Documents. It's so rare these days to have games that store their save files somewhere else.
Luckily I had barely made any progress in either game, unluckily I lost a bunch of Daily Login bonuses and some of the special bonuses during the lead-up to the release of the Monster Hunter World expansion pack.
I lost the data because I thought I had all the important bits backed up before I converted the disk to GPT (which deletes everything) to enable me to install Windows in UEFI mode (I recently got a UEFI equipped motherboard).

You can use a profile editor to just set you to the point where you where before this works flaweleesly I did the same and if you do not cheat anything that shouldn't be in your chest etc then you will not be banned as well
